Authentic Morogo Recipe

Morogo or moroho, also known as African spinach, refers to a group of at least three different dark green leafy vegetables found throughout Southern Africa harvested for human consumption.

It is considered a traditional South African dish and forms an important part of the staple diet in rural communities.

One of African amazing dish that has a great benefits and nutrition as well. It is rich in Vitamin C, which is a great body immune booster. Rich in Iron, which keeps the body energized, focused, the temperature in control and the immune system.

 

STORAGE AND REHEATING

Store leftovers of Morogo stew in an airtight container and keep in fridge for up to a week. You can as well freeze for months. Reheat Morogo stew on stove top or microwave until warm. 

 

 

RECIPE INGREDIENTS

3 Tablespoons vegetable oil

1/2 teaspoon minced garlic

1 onion, sliced

Chill flakes

1 Tablespoon Curry Powder

1 fresh tomato

2 potatoes, diced(optional)

750g fresh spinach leaves or morogo

 Salt, to season

 

 

DIRECTIONS ON HOW TO MAKE AUTHENTIC MOROGO RECIPE

Rinse your morogo well under running water to remove any grit or bugs. If there are any thick stalks, cut them away from the leaves and slice them thinly. Pat them dry with a clean kitchen towel. Set aside.

Under medium heat, add the cooking oil in a saucepan..Add the chopped onion and minced garlic to the pot and sauté until soft and fragrant. Add the diced tomato to the pot and cook until the tomato begins to soften.

Stir in the chopped morogo leaves to the pot, stirring well to coat them with the onion, garlic, and tomato mixture.

Season with salt, curry and pepper to taste. Add chili flakes for a bit of heat(optional)

Reduce the heat to low, cover the pot with a lid. Stir occasionally to prevent sticking and burning. and let the morogo simmer until they wilted and are tender. Taste and adjust the seasonings if needed.

Transfer the cooked morogo from heat into a serving dish. Serve hot with rice, pap, or as a side dish for your favourite stew or sishebo.

 

RECIPE TIPS

You can incorporate meats or veggies of choice into Morogo to enhance the flavors in your dish.

Do you want to make it a whole meal, why not try adding diced cooked potatoes into dish to give you a complete meal.
