Simple and quick to make, this cheesy fajita pasta will be served in no time at all. It’ss amazingly creamy but without the use of cream and bursting with flavour.

Boil water In a large pot and add salt.
Place in spaghetti and cook according to package directions until al dente. Drain and set aside
Meanwhile, in a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper.
Cook, stirring occasionally, until golden for about 6 minutes, then add onion and bell peppers and cook, stirring, until soft. Add spices and stir until coated.
Add tomatoes, broth, and half-and- half and simmer for about about 3 minutes.
Add cooked spaghetti and toss until coated, then remove from heat, add cheeses, and stir until melty and creamy. Season with salt and pepper.
Garnish with cilantro before serving.
