Delicious Pineapple Chicken

This pineapple chicken is a stir fry of chicken, pineapple and vegetables all tossed in a sweet and savory sauce. Easy to make and requires less time.

RECIPE INGREDIENTS

1 tablespoon vegetable oil

1 lb. boneless skinless chicken thighs, cut into 1″ pieces

Kosher salt

Freshly ground black pepper

1 red bell pepper, chopped

3/4 cup canned pineapple juice

1/4 cup low-sodium soy sauce

1/4 cup brown sugar

2 tablespoons hoisin sauce

2 cloves garlic, minced

1/2 jalapeño, minced 

2 teaspoons cornstarch

1 cup pineapple chunks

1/4 cup cashews

Sliced green onions, for serving

Lime wedges, for serving

 

 

DIRECTIONS ON HOW TO MAKE DELICIOUS PINEAPPLE CHICKEN

Heat oil in a skillet over medium-high heat.

Season chicken with salt and pepper and cook, turning occasionally, until golden for about 5 minutes.

Stir in bell pepper and cook until just tender for about 3 minutes more.

In a small saucepan, combine pineapple juice, soy sauce, brown sugar, hoisin sauce, garlic, and jalapeño and bring to a boil.

In a small bowl, whisk together 2 teaspoon water and cornstarch until well combined, then add into saucepan. Cook until thickened, for about 5 minutes.

Pour sauce over chicken and let simmer 3 minutes. Stir in pineapple and cashews.

Garnish with green onions and lime and serve with plain rice.
