STORING AND REHEATING

You can store Goat Light soup for a week in the fridge, and it will still retain its flavor. You can make a really big batch and freeze it in portions to save time.

To reheat, if frozen, let it thaw overnight first. Then reheat on the stovetop. Cover it before reheating in microwave

RECIPE INGREDIENTS

3 teaspoons Tomato paste

2 medium fresh tomatoes

2 garden eggs, sliced

1/2 pound goat meat

1/2 hot pepper (kpakpo shito)

1/2 inch root ginger

2 cloves garlic

2 onions

Seasoning powder or cubes

2 Okro pieces

Salt to taste

 

 

DIRECTIONS ON HOW TO PREPARE GHANA GOAT LIGHT SOUP

Wash and clean goat meat and cut into desired sizes. Place meat in cooking pan

Wash and blend ginger, garlic, hot pepper, one of the onions until smooth

Pour blended ingredients over meat and season with salt and cubes. Marinade meat for a few hours before cooking.

Place the meat on high heat. Add a little water, garden eggs, onion and fresh tomatoes. Cook gently for 10 minutes until ingredients are soft and tender.

Add tomato paste and remove garden eggs, onion and fresh tomatoes when cooked.

Blend ingredients until smooth. Pour into cooking pot and add a moderate amount of water to meat. Add okro pieces.

Cover and allow meat to boil for about 20 minutes until meat is soft and tender.

When oil appears on top of soup, it’s ready to be consumed

Adjust salt and serve with  Fufu, Banku, Kenkey, konkonte or on its own.
