Ghana Omo Tuo Recipe

In this article, we are going to learn of one Ghana and West African amazing dish popularly known in  as Ghana Omo tuo Recipe ( Rice balls).

It is made by cooking very soft, glutinous rice, then pounding or rolling the rice into sticky balls. Some describe it as “rice fufu” or simply as rice balls

This meal made from rice goes very well with various soups like peanut butter soup, Palm nut soup and so many other

Omo tuo, as it is known in Ghana, has its roots from the Hausa people in the Northern region but is widely enjoyed throughout the country.

The word tuwo is most likely the Hausa equivalent to different types of fufu or dumpling made from a grain flour, for example tuwo zaafi, a millet or corn and cassava dumpling, or tuwo masara, a cornmeal dumpling

 In the Northern Hausa-Fulani territories of Nigeria, it is eaten with a baobab leaf and dried okra soup called miyan kuka.

ORIGIN AND HISTORY OF RICE

Rice, particularly Oryza glaberrima, is indigenous to West Africa, and has been cultivated there for at least 3000 years. The rice is naturally reddish in color with a nutty taste. It is often presented in its processed form, where the bran and germ is removed resulting in a whitish rice.

Although it is not widely eaten today; it still makes up 20% of the rice cultivated in West Africa. It has now mostly been replaced by Asian rice, oryza sativa, which was introduced to Africa by the Portuguese in the 1500s.

WHICH RICE WORKS BEST FOR OMO TUO?

Long or short grain varieties of rice which have not been par-boiled works best. Thai jasmine rice, long or short grain white rice or Asian sticky rice are the best varieties to use for this.

Par-boiled rice and basmati rice may separate easily and lack a sticky consistency.

EQUIPMENT
Wooden ladle or Potato Masher
Large cooking pot

 

 

RECIPE INGREDIENTS

1 cup white rice(any rice of choice)

4 cups water

2 teaspoons salt

 

 

DIRECTIONS ON HOW TO PREPARE GHANA OMO TUO RECIPE

In a large bowl, wash and rinse the rice to remove excess starch. This step is optional

Under a medium heat, place the rice, salt and water in a pot or rice cooker and bring to a boil.

Turn down the heat to low, cover, and allow the rice to cook for about 20 minutes. Allow the rice to steam in the pot until most of the water is absorbed.

When the rice is cooked and soft, turn off the heat and let it sit until it is cool enough to handle.

Using a potato masher or large wooden spoon, pound rice using a mash and fold method  until it is fairly smooth.  Repeat until the rice is mushy and sticky.

Place a bowl with  water and put it next to the pan.

Using your wet hands, or an ice cream scoop, scoop up enough of the rice into a small bowl. Swirl around until balls are formed.

Serve the Omo tuo with any type of soup such as  peanut soup or palm nut soup.
