Gratin De Giraumon(Pumpkin Gratin)

Gratin De Giraumon(Pumpkin Gratin). Gratin de giraumon is a traditional gratin dish originating from Mauritius. The dish is made with a combination of diced pumpkin, milk, egg yolks, butter, grated cheese (Cheddar and Parmesan), breadcrumbs, salt, and pepper.

The purée is poured into a buttered baking dish, topped with breadcrumbs and grated cheese, then baked until the top becomes light golden in color.

 

 

RECIPE INGREDIENTS

800g pumpkin, cut into small cubes

Dried thyme, to taste

Parsley, to taste, finely chopped

Pepper

1 glass warm milk

1 egg yolk

Salt, to taste

Butter

Grated cheese, to taste

Breadcrumbs

Oil

 

 

DIRECTIONS ON HOW TO MAKE GRATIN DE GIRAUMON (PUMPKIN GRATIN)

Preheat oven at 360 degrees

Under medium heat, place oil in a pan and fry the pumpkin pieces until softened. Season with salt and add the thyme OR the Pumpkin pieces are boiled until tender, then mashed into a purée.

Transfer the pumpkin to a bowl and add the warm milk, pepper, butter and egg yolk. Using a wooden spatula or whisker, beat the mixture to form a smooth paste and stir in the parsley.

Place in a baking dish and sprinkle with the cheese and biscuits. Brown in the oven for 15 minutes.

Serve warm as an accompaniment to roasted meat.
