How To Prepare Angwa Mo. Braised rice is a Ghanaian style of cooking rice. In the Akan language, it is known as angwa moo, which means “oil rice,” as well as omɔ kɛ fɔ (omor ker for) in the Ga language.

It is made with a few ingredients and is usually served with some vegetables and protein such as chicken or pork to round out the meal.

It’s usually eaten as a main course with green pepper or shito sauce and fried eggs, omelets, or sardines.

 

Salted beef used in this recipe is often used in flavoring many Ghanaian dishes. It is usually pink in color due to the inclusion of food dye.

The inclusion of spices into the curing process of the meat, gives the meat a musky and aromatic taste.

Tolo beef is also used in the preparation of stews and soups or jollof rice.

 

HOW TO MAKE TOLO BEEF AT HOME

RECIPE INGREDIENTS

80g beef (sirloin or rib eye), cut in cubes

2 tablespoons sea salt

2 bay leaves

Pink dye color (optional)

 

DIRECTIONS

Wash and clean beef. In a bowl with a lid, add the beef and sprinkle with sea salt.

Rub the beef with the salt, color, then add the bay leaves.Cover the container and place in a warm place for 24 hours.

Drain the blood then cover the container again and place in a warm place for another 24 hours

 

WHAT RICE TO USE FOR THIS RECIPE?

I recommend using  Aromatic Rice. It is a medium- to long-grained rice and is known for its nut-like aroma and taste. 

While there are a few varieties of aromatic rice, the two most common ones are basmati and jasmine. For the angwa mo recipe, you may use jasmine rice.

RECIPE INGREDIENTS

4 tablespoons oil of choice

1 cup fragrant white rice

3 oz. salted beef (tolo beef), diced

2 onions , chopped (divided in 2)

2 teaspoons salt

1 cube Maggi chicken broth

1 red hot pepper , diced

2 cups water

Salt

Pepper

 

 

DIRECTIONS ON HOW TO PREPARE ANGWA MO

Wash rice, drain with clean water in a minute medium bowl.

Under medium heat, heat the oil and fry the chopped onions in hot oil in a large saucepan until golden brown. Reserve half of the onion

Add the salted beef and cook with onion. Add rice and fry over medium heat for about 2 minutes, stirring constantly.

Add the bouillon cube and stir. Add the hot pepper and mix. Add the water and stir well. Cover with lid and cook for 5 minutes.

Add the remaining onion and cook again until rice is soft and tender. Remove from heat. Serve with hot pepper sauce and other toppings.
