How To Prepare Fante Kenkey
Kenkey (also known as kɔmi, otim, kooboo or dorkunu) is a staple dish similar to sourdough dumpling from the Ga and Fante-inhabited regions of West Africa.
WHAT CAN BE SERVED WITH FANTE KENKEY?
Soups (light soup, groundnut soup, ebunuebunu, palm nut soup, etc.)
Stew of choice
RECIPE INGREDIENTS
3 cups Corn dough
Dried plantain leaves
Salt(Optional)
DIRECTIONS ON HOW TO PREPARE FANTE KENKEY
In a large bowl,mix 1 cup of corn dough with water until a thick running consistency is obtained. Stir in salt to taste.
Under high heat, Pour mixture into pot and boil. Stir until mixture thickens and knead until no lump is formed. Cook mixture until semi cooked.
In a large bowl, add the semi boiled mixture with the rest of the raw corn dough using a wooden spoon or spatula. Mix and combined well and mold into preferred size
Clean the plantain leaves with clean water and dry. Wrap the dough with the plantain leaves
Place a saucepan on high heat and place plantain leaves at the bottom of cooking pot and arrange the wrapped dough on them.
Add water until almost full and cover and boil for 20 to 30 minutes.
When the kenkey is cooked, you won’t taste the rawness of the corn dough in the Fante Kenkey.
Serve with any stew or soup of your choice
