How To Prepare Gari Fotor. Gari Fotor is a popular staple food in Ghana. This delicious Ghanaian dish has a bright orange colour and is sometimes called “garri jollof”.

Garri is prepared by fermenting finely grated cassava, before pan-frying.

 

 

This meal is usually served with either meat, fish or egg.

 

HOW TO PROCESS CASSAVA( MANIOC, MANDIOCA, or YUCA) TO GARI

1. Harvest and sort your cassava taking out those with black colour.

2. Peel the cassava roots using a sharp knife

3. Wash and clean the cassava root in a large 

4. Grate the cassava roots into a mash. Place in a sack.

5. Ferment the Cassava Mash to Remove Hydrocyanic Acid

6. Press the cassava sack with a heavy tool to drain the water in the garri

7. After draining the garri mash, sift the wet cake into grits

8. Fry or roast the grits to form edible garri under medium heat. Stir continuously to avoid burning. Here, you can add palm oil to get yellow garri.

9. Spread the garri in a thin layer and allow it to cool

10. Sieve or grind the garri to break larger granules

Carrot, Green beans,green bell peppers

Avocado

Eggs

Mushrooms

Riped fried plantains

1 cup Gari

Salt to taste

2 teaspoons Powdered pepper

1 medium Tomato

 2 Onions

1 Carrot

1 Green bell pepper

Sardine

Cooking oil/ Palm oil

DIRECTIONS OF HOW TO PREPARE GARI FOTOR

Wash and cut tomatoes, onions, carrot and green pepper into slices and set aside.

Under medium heat, pour little amount of oil into a pot. Place in onions, then add the tomatoes. Stir and leave it to cook for a while.

Next, add salt and pepper and stir.Add your chopped carrot, green bell pepper and sardine and stir.

Pour gari into a bowl and wet it with a little water. Add the gari to the sauce on fire and stir till it mixes well.
