How to prepare Ice Kenkey

Ice kenkey is a popular Ghanaian dessert made from kenkey, a steamed dumpling made from Fante and Ga kenkey, which are made of maize, with the sweet flavor from milk and sugar.

Like other beverages made in Ghana, such as Burkina, Fula and sobolo, ‘ice kenkey’ has remained one of Ghana’s finest beverages.

Mostly taken with bread or any pastry, it is served on the street and at events such as engagements, funerals and sports activities.

Kenkey is popular in Ghana, Côte d’Ivoire, Togo, and western Benin, but it also was exported to Jamaica and Guyana. In Jamaica, it is called dokono; in Guyana, konkee. In Trinidad, it is called paime.

Kenkey used in preparation is low in fat, with a high content of complex carbohydrates, protein and fibre. This makes it an excellent food option for those who are looking to lose weight or those who want to maintain their current weight.

1 ball of Fante/Ga Kenkey

1/2 cup of chilled Water

1 tin of Milk

 2 tablespoonful of natural Yoghurt (Optional)

1 tablespoonful of Sugar(for taste)

30g of roasted Peanuts or Groundnuts

 

 

DIRECTIONS ON HOW TO PREPARE ICE KENKEY

Cut kenkey into pieces into a bowl after removing it from the husks. Pour kenkey pieces inside a blender. Add natural yoghurt

Add chilled water and reasonable amount of milk and sugar. Blend until a smooth runny-like consistency is obtained. Cover the blender with its lid.

Pour ice kenkey into a bottle or bowl. Serve immediately or refrigerate it until it gets chilled. Serve with roasted groundnuts or peanuts.

You can eat ice kenkey with pie, bread, cookies
