How To Prepare Jollof Rice

Jollof rice is a West African dish that’s a staple in most household. This is a delicious jollof rice recipe which is a combination of unique Ghanaian flavors.

This recipe is made with chicken on the side. It can be eaten with a salad or spaghetti on the side as well.

RECIPE INGREDIENTS

For Making Chicken:

1 pound boneless beef or Chicken

3 cloves garlic

1 inch ginger

1/2 green bell pepper

4-6 scotch bonnet pepper (optional)

1/2 onion

salt as required.

Seasoning cubes and powder

 

For Making Jollof:

2 cups rice

120ml oil

3 tablespoon tomato paste

2 medium onions

Fresh or Powered pepper as required

2 large tomatoes, chopped

1/2 teaspoon curry powder

1 bay leaf

2 cups water adjust with the brand used

salt as required

Seasoning cubes and powder

 

 

DIRECTION ON HOW TO PREPARE JOLLOF RICE

For Making Chicken:

Wash and cut the meat into desired sizes into a large pot.

Blend all the ingredients under the meat together then pour over the beef. Add a little amount of water.

Place pot under high heat and cook untill is soft and tender. Remove from fire and take meat from stock.

 

For Making Jollof:

Blend onions, and pepper together, set aside.

Pour oil in a saucepan and set on fire. When oil is hot, fry meat and set aside. Remove the meat when golden brown. Drain oil on a tissue paper

Add tomato paste to oil, stir fry for about two minutes, add blended onions, and peppers. Add chopped tomatoes and stir fry. Add salt, curry and bay leaf. Cover and let simmer on high heat for about five minutes. 

Wash rice with clean water. Add washed rice and leftover beef stock from the cooked beef, water to stew. Taste and adjust for salt.

Cover tightly and bring to boil. Immediately it starts boiling, remove lid, using a thin wooden ladle or a long fork stir from bottom to top.

Cover tightly and let simmer on low heat for 10-12 minutes.

 Remove lid, stir again. Stir in beef at this point. Cover tightly and let simmer for 10 more minutes till its well cooked.
