How To Prepare Kelewele. Kelewele (Spicy Fried Plantain) Recipe is spicy snack made from ripe Plantain which is sweet and enjoyable, seasoned with variety of spices.

Kelewele is not only served as a snack but is also served as a side dish. It is sold in most streets in Ghana and other West African Countries.

I’ve always loved buying these from street vendors across the city during night time. In Ivory Coast, it is known as Aloco. It is crunchy on the outside and soft on the inside.

WHAT SPICES IS USED TO MAKE KELEWELE?

You can make kellewele with Fresh ingredients but you can as well use dry spices.

The spices used to make Kelewele include ginger, garlic, anise seeds, cloves, nutmeg and pepper. Some of these spices are optional like the nutmeg, anise seeds and cloves.

Kelewele is best served with peanuts, Cooked rice of choice, Stewed Beans/ Red red or as a dessert.

 

 

RECIPE INGREDIENTS

6 ripe plantains

1/4 onion cut in pieces

1 teaspoon Cayenne or chili pepper

1 tablespoon chopped ginger

2 garlic cloves(optional)

1 teaspoon Anise seed

1/2 teaspoon nutmeg powder(optional)

salt to taste

1 teaspoon bouillon powder or small bouillon Maggie cube

oil for deep frying

 

 

DIRECTIONS ON HOW TO PREPARE KELEWELE

With a knife slice off the two tips/ ends of the plantain. This will make it easy to remove the skin of the plantains

Cut plantains in diagonal pieces or medium chunks into a large bowl. Set aside

Add onion, cloves, anise seed, pepper and ginger in blender. Blend with little water to form a smooth paste

Pour blended mixture over chunks, Season with Maggie, nutmeg and salt and marinade for 20-30 mins.

Heat oil in a large pan until hot

Transfer marinated plantains into hot oil without over crowding the oil.

Fry plantains till golden brown

Using a strainer ladle, transfer to a paper towel lined tray, colander or plate.

Serve warm with groundnut.
