How to prepare Light Soup

This soup is tasty and delicious in Ghana. You can serve it with Rice, Kenkey,Fufu, Banku or it can be take alone.

 

 

In this recipe, I will guide you on how to make this from scratch and enjoy with the whole family.

RECIPE INGREDIENTS

2 garden eggs

2 medium sized onions

3 teaspoons turkey berries (optional)

1/2 pound chicken or Fish

3 medium sized fresh tomatoes

3-4 scotch bonnet pepper

1 teaspoon tomato paste

Smoked fish of choice

2-3 okra 

1 clove garlic(optional)

1/2 inch root ginger

cubes Seasoning

 

 

DIRECTIONS ON HOW TO PREPARE LIGHT SOUP

Wash and chop into pieces garlic, ginger, pepper and 1 onion. Blend until smooth consistency is obtained.

Wash and clean chicken or fish. Place in a pot and add the blended mixture, seasoning and salt

Cover with lid and place on a high heat. Cook for about 10 minutes, stirring frequent.

Add garden eggs, okra, onion, fresh tomatoes and cover to cook until garden eggs are soft.

After like 7-8 minutes, remove the garden egg, tomatoes, and blend with little water in a blender to a smooth paste. Now add the tomato paste to the chicken.

Stir and add pepper and some more water and cover to cook for about 3minutes

Now use a tiny mesh sieve or colander to sieve in the blended mix. Add smoked fish. Cook soup until it thickens to a light thick consistency

Taste for seasoning and salt. Serve with any food of choice.
