How to Prepare Mackerel Sauce

This sauce is excellent and delicious ever! Mackerel is rich in omega 3, which makes the sauce the healthiest too. 

The sauce is suitable with boiled yam, boiled or fried plantain and bread

 

 

RECIPE INGREDIENTS

2 medium sized smoked or fresh Mackerel, cut into different sizes

1-2 habanero peppers, minced

4 plum tomatoes, diced

A Sprig of Rosemary or Thyme

2 teaspoons powered pepper

1 onion, 1/2 minced and 1/2 sliced

1 garlic clove(minced)

Seasoning cube or powder

salt to taste

1/4 cup palm or vegetable oil

 

 

DIRECTIONS ON HOW TO PREPARE MACKEREL SAUCE

Clean the fish with water and pat dry. If using smoked mackerel, remove skin and bones. Break into chunk pieces and clean.

Season with salt, garlic and the powered pepper. Let it sit for 30 minutes

Heat palm oil or any other type of oil; then add the fish and onion slices.

 While the onion is cooking, fry the fish gently on each side making sure they do not break. You can remove fish from oil or still continue with sauce

Once both sides of the fish is seared, add the tomatoes, onion, thyme and habanero peppers; then cover to let it cook for about 20minutes.

After 20 minutes, season to taste with salt and cubes.
