How To Prepare Okro Stew. Okro soup is a very popular and delicious stew that is loved by the majority of the people, in West Africa.

Okra is known as okro throughout West Africa. The etymology of the word okra is traced to the 1670s in West Africa, with the name okra sounding fairly close to the Igbo (Nigeria) word, ọ́kụ̀rụ̀, as well as the Akan (Ghana, Twi) word, nkuruma.

It is known by other names such as nkruma (Twi, Fante), betri or fetri (Ewe), engmomi (Ga), ila (Yoruba) and gombo (Bantu/French Speaking Africa/Congo).

 

Okra soup is often classically made with beef (beef parts) and fish. However, shrimps, Lamb Meat, goat meat, or any other meat or fish of choice can be used.

You can enjoy this stew with Eba and Banku or on it own.

 

HOW TO MAKE HOMEMADE PALM OIL

Palm oil is a vegetable oil that comes from the fruit of the oil palm tree.Native to the west coast of Africa, the most widely grown oil palm variety is the Elaeis guineensis Jacq., also known as the African palm

Study this simple steps to get yours at home.

 

1. Wash the palm fruits, place in a pot and cover with water. Boil untill the husk is tender.

2. Strain the water out of the pot and pour the palm fruits in a mortar in batches OR pour into plan oil machine if using.

3. Pound till the husk comes off the seed.
4. Scoop out the pounded fruit and put into a big pan.

5. Add warm water.Gently squeeze the palm fruit juice out of the kernels.

6. Use a colander to sieve out the squeezed juice into a clean pot. If you feel there’s still some juice to be squeezed out, add some more clean water and squeeze.

7. Boil the juice in the pot till the water evaporates. What will be left in the pot is your palm oil that can be used for Okro stew, Banga soup, etc.

 

RECIPE INGREDIENTS

1 cup Okra, diced

1 pound meat or chicken, cut into pieces

2 onions

4 medium-sized tomatoes

4 pieces Kpakpo shito pepper

1 inch root Ginger

2 cloves of garlic

1/4 tablespoons herrings 

Cowhide (Wele) 

1/2 cup Palm Oil

Crabs (optional)

1 salted fish(momoni)

Salt

Seasoning cube or powder

 

 

DIRECTIONS ON HOW TO PREPARE OKRO STEW

Wash chopped meat, crabs and cowhide in a large bowl.

Wash and cut into pieces 1 onion, garlic, pepper and ginger. Blend until smooth

Place meat, crabs and wele in a saucepan, add a little water and bring to a boil. Pour on blended ingredients(reserve 1/4 cup) and steam for about 10 mins until tender.

In a separate pot, place chopped okro, add a cup of water and let it simmer for about 8 mins. Remove from fire and allow it to cool.

Now pour some palm oil into another saucepan. Add salted and sliced onions. Cook for about 3 mins

Add reserved blended kpakpo shito(pepper), ginger and garlic and allow to simmer for about 5 mins.

Wash and chop tomatoes and add to the sauce.

Wash your herrings and take out the bones, add to the sauce and let it simmer for about 5 mins.

Add your cooked okro and stir to mix evenly, reduce the heat and allow it to cook for about 10 mins. Add some salt to your preferred taste.

Serve your Banku with your Okro stew.
