RECIPE INGREDIENTS
1 1/2 cups all purpose flour plus more
1 1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 teaspoon crushed cardamom spice
1/2 teaspoon grated nutmeg or cinnamon
2 Tablespoons grated coconut or coconut flakes(optional)
1 large egg
3 tablespoons melted butter/oil

DIRECTIONS ON HOW TO PREPARE SOUTH AFRICAN MANDAZI
Mix dry Ingredients: In a large bowl combine flour, sugar, baking powder, salt, sugar, cardamom spice and nutmeg. Whisk together then make a well in the center
Combine liquid ingredients: Gently add eggs, butter and milk. Using a spatula, combine until mixture comes together and dough is smooth.
Turn the dough out onto a floured surface and knead until smooth.
Divide the dough into 4 portions.
Roll out dough in to 1 inch thick. Cut in bite size pieces or triangles. Repeat with the remaining dough portions.
In a large sauce pan, pour vegetable oil, until it is at least 2 inches high (too little will result in flatter mandazi)
Place on medium heat until oil reaches 350 degrees.
Fry until golden brown about 3-5 minutes depending on size. Work in batches
Remove with a slotted spoon and drain on paper napkin. Serve warm with powdered sugar or cinnamon sugar or Kenyan Coffee
