This Spicy millet drink is popularly called Zomkom or Zomkoum. Zomkom is made up of two words – “Zom” which means flour and “Kom” which means water.

Suffice to say, Zomkom literally translates to mean “flour water”. This drink is widely enjoyed in many West African countries such as Ghana, Burkina faso and many more.

Millets have polyphenols in high quantity and this helps to remove harmful free radicals from our body.

Millets contain a significant amount of soluble and insoluble fibre that regulates digestion process . It is a good alternative if you intend to go gluten-free.

Note: It is important to state that millet must be consumed in moderation. This is because of the goitrogens present in millets.

Goitrogens are substances capable to suppressing thyroid activity which can lead to goitre. This is because it blocks the absorption of iodine which is very important for thyroid function.

HWENTIA(NEGRO PEPPER)

Negro pepper, also known as Ethiopian pepper, is a type of spice that is native to West Africa.

It is from the Amonaceae family and it is commonly called Hwentia in Akan–Asante, Kimba in Hausa, Uda in Igbo, and Erunje or Erinje in Yoruba.

This is also called as the famous African pepper and is known to be utilised often as a substitute for common pepper.

It has also been used to help treat respiratory problems, such as coughs and colds.

RECIPE INGREDIENTS

2 cups of Millet

1/2 teaspoon of cloves

1/2 teaspoon of Ginger

1/2 tablespoon black pepper

2 strips hwentia

2 Dried chilli

Sugar / honey

 

 

DIRECTIONS ON HOW TO PREPARE SPICY MILLET DRINK

Soak millet in water for 24 hours. Rinse millet with clean water. Remove any chaff and stones

Pour into blender or food processor. Add remaining spices and blend until smooth.

Sieve the mixture with a fine mesh to obtain smooth tasty drink. Add sugar or honey to taste.

Pour in a jar and add ice cubes or refrigerate.

 

HOW TO STORE ZOMKOM

Wash the bottles with covers properly and sterilize in hot water.Drain the excess water from the bottles

Pour the Zomkom into the sterilized bottles with a funnel.Make sure you don’t fill the bottles to the brim to give space for easy mixing and shaking when ZOMKOM settles at the bottom of bottle.

Put Zomkoum bottles in the refrigerator or freeze to preserve it.
