How To prepare Yam and Egg Sauce

How To Prepare Yam and Egg Sauce.Boiled yam and egg sauce is very easy to make.

Typically in Nigeria and West Africa, we use tomatoes, scotch bonnet chilli and onions in preparing this sauce. 

This meal can enjoyed any time in the day and good for Thanksgiving too.

 

 

RECIPE INGREDIENTS

For Making Yam:

1/2 tuber of yam 

Salt

 

For Making Egg stew:

1/4 cup vegetable oil

1 medium Onion

1/2 teaspoons ginger, minced

10 tomatoes, diced or minced

4 scotch bonnet pepper

1 teaspoon curry

1 green bell pepper, cut into pieces

6 eggs

1 pack sardine

1 pack corned beef

1 large Smoked salmon( optional)

1 teaspoon seasoning cube or powder

 

 

DIRECTIONS ON HOW TO PREPARE YAM AND EGG SAUCE

Using a sharp knife, peel and wash yam. Cut yam into round or and shape of choice

Under a high heat, pour yam pieces in saucepan and add water. Cover with lid and allow to boil.

Whiles yam is on fire, blend 1/2 onion, tomatoes and pepper

Remove the sardines corned beef from its can and pour into small bowl. Set aside.

In a separate bowl, break and beat the eggs.

Place a pot on medium heat, add sliced onion pieces and ginger. Cook until soft. Add the blended mixture.

Cook until it thickens, stir continuously. Add sardines, corned beef, green bell peppers, curry and a cube

Add the beaten eggs. Reduce heat and cover with lid.

After the yam has boiled for at least 15mins. Check to see if it is soft. Remove from fire and drain.

Serve egg stew with yam when cooked.
