How to prepare Yam Balls

How To Prepare Yam Balls. Let’s learn a new thing this time around. I am in love with recipe.

I remember the first day I took yam balls with salad, I could not resist the savory taste it has when all ingredients are in their right proportion.

Yam balls (Croquettes) are popular snacks made with yam, enjoyed both in Ghana and Nigeria.

This dish can be enjoyed any time any day

 

 

RECIPE INGREDIENTS

250g of peeled as diced Yam or Potatoes

500ml of water

Half a teaspoon of Salt

Roughly shredded smoked Mackerel or Tuna

1 finely diced medium Onion

Finely diced mixed Peppers (Red, Green and Yellow)

1 whole Egg

3 tablespoonfuls of Milk or stock

1 tablespoonful of Butter

1/4 teaspoon of freshly milled Black or White Peppercorns

FRYING:

Oil for deep frying

100g of Breadcrumbs or flour

2 beaten Eggs

 

 

DIRECTIONS ON HOW TO PREPARE YAM BALLS

Peel the yam. Wash and  cut into small chunks.

Pour into a pan, add enough water to cover it. Add salt to taste and bring to boil till soft.

Next, place the egg yolk in a separate bowl

Drain the oil from the sardine if using sardines

After the yam is done and soft about 15minutes, drain the water. Pour inside a large bowl

Add 3 tablespoons of butter and mash till smooth using a potato masher or fork

Add the parsley, any other dry ingredients you will be using to the mashed yam, follow by the sardine and mix together till well combined (you can use your hand to mix if you want)

Adjust for salt and seasoning.

Add the yolks and mix to combine

Place in finely chopped mixed peppers to the mashed yam and mix again to combine.

Whisk the reserved egg white in a small bowl till well combined.

Mold the mashed yam to small balls, dip into the whisked egg white and then into the bread crumbs or flour.

Place on a clean plate or baking dish, repeat this process for the rest of the mashed yam

Put a shallow pan on high heat.

Add vegetable oil and heat till hot.

Add a tiny drop of the mashed yam or egg white and if it floats to the top then the oil is ready to use.

Carefully, drop the yam balls into the hot oil.( Do not overcrowd the oil and fry till golden brown) Place on a kitchen towel to drain oil. Repeat process for all the yam balls.

Serve immediately or allow to cool. You can have it with salad, hot sauce or just on its own.
