Italian Meatballs

These Italian Meatballs are classic Italian-American style meatballs are incredibly soft!

They’re mixed with ground beef and pork, loaded with herbs and cheese, and served with a traditional tomato sauce.

RECIPE INGREDIENTS

1 cup fresh bread crumbs

1/2 cup milk

1 lb. ground beef

1/2 lb. ground pork

1/2 lb. Italian sausage, casings removed

1 small onion, finely chopped

3 cloves garlic, minced

Kosher salt

Freshly ground black pepper

2 large eggs, beaten

1 cup freshly grated Parmesan

1/4 c. freshly chopped parsley

2 tablespoons extra-virgin olive oil

 

Tomato Sauce;

2 tablespoons extra virgin olive oil

3/4 cup finely chopped onions

3/4 cup finely chopped carrots

3/4 cup finely chopped celery

2 tablespoons chopped fresh parsley

1 clove garlic, minced

1 28-ounce can crushed or whole tomatoes, including the juice, or 1 3/4 pound of fresh tomatoes, peeled, seeded, and chopped

1/2 teaspoon dried basil or 2 tablespoons chopped fresh basil

1 teaspoon tomato paste

Salt and freshly ground black pepper to taste

 

 

DIRECTIONS ON ITALIAN MEATBALLS

Heat olive oil in a large skillet under medium heat. Add the onions, carrots, celery, and parsley.

Stir and reduce the heat to low and cover the pan. Cook for about 15 to 20 minutes until the vegetables are soft and cooked through.

Add the garlic. Cook the garlic for a minute, then add the tomatoes (if using whole canned tomatoes, break up with your fingers as you add them to the pan).

Add the tomato paste and basil. Season with salt and pepper.

Bring to a low simmer, reduce the heat to low and let cook uncovered until thickened.

Purée sauce in a blender, or push through a food mill for a smooth consistency. Return to pan. Adjust seasonings. Set aside

In a small bowl, mix bread crumbs with milk until evenly combined. Let it rest for 15 minutes.

Using your hands, combine beef, pork, sausage, onion, and garlic in a separate bowl

 Season with salt and pepper, then gently stir in bread crumb mixture, eggs, Parmesan, and parsley until just combined. Form mixture into 1″ balls.

In a large high-sided skillet over medium heat, heat oil.

Sear meatballs on all sides to develop a crust

Set meatballs aside, reduce heat to medium-low, and add sauce to skillet.

 Bring sauce to a simmer then immediately add meatballs back to skillet. Cover and simmer until cooked through for about 8 minutes.
