Mauritian Alouda Recipe
Alouda is a traditional beverage originating from Mauritius. It is typically prepared with a combination of basil seeds, agar jelly, milk, and vanilla.
The ingredients are combined, then served over ice. The drink can usually be found at numerous street markets, even though it is also produced industrially and can be bought in many stores.
RECIPE INGREDIENTS
7g agar agar
water
1 tablespoon raw sugar
3 tablespoon basil seeds or chia seeds
375ml condensed milk
750ml milk
2 tablespoons rose water
pink food colouring

You will need to start preparing this drink the day before
Agar agar and basil seeds can be found in your local Asian grocery store.
Try serving over a scoop of vanilla ice cream instead of ice for a creamy treat.
Additional sugar can be added to taste.
Best kept up to a day.
If you prefer to have a green Alouda, replace the rose water with 1/4 tsp of almond essence and use green food colouring instead.
DIRECTIONS ON HOW TO MAKE MAURITIAN ALOUDA RECIPE
Pour agar agar in a medium saucepan and add 200ml cold water and allow to sit for 2 hours until soft.
On medium heat, place the saucepan stirring repeatedly until agar agar has completely dissolved. Stir in raw sugar and bring to the boil, stirring until sugar has completely dissolved.
Remove from heat, allow to cool, and then refrigerate overnight to set into a mousse.
The next day, grate the agar agar mousse in a bowl and set aside.
Hand pick basil seeds of particles. Add 8 cups of cold water to the seeds and stir to loosen seeds. Set aside for 30 minutes or until the seeds have expanded.
Once seeds have expanded, stir in condensed milk followed by regular milk and agar agar mousse gratings.
Stir in the rose water and 3 drops of the food colouring, then mix well.
Transfer to a jug, keep refrigerated and serve chilled in a glass over ice.
