Sausage and Egg Breakfast Casserole
This baked dish is one of our favorite make-ahead breakfast casseroles: It’s layered with sausage, eggs, and a generous sprinkle of cheese.
Just as fitting for this year’s holiday brunch main dish as it is for a weeknight breakfast for dinner, this easy casserole recipe is a guaranteed crowd-pleaser.
RECIPE INGREDIENTS
Pork breakfast sausage
Sour cream or Greek yogurt
Heavy cream
Small sweet onion
Mini sweet peppers
Eggs
Shredded sharp Cheddar cheese
Salt
Black pepper
DIRECTIONS ON HOW TO MAKE SAUSAGE AND EGG BREAKFAST CASSEROLE
Preheat oven to 350°F. Grease a 9- x 13-inch baking dish with nonstick cooking spray.
Over medium heat, heat a large skillet and add sausage and cook, breaking it into bite-size pieces using a wooden spoon.
Cook until brown and no pink for 12 to 15 minutes. Drain off most of the grease, and set aside. Do not clean out skillet.
Add peppers and onions to the same skillet, and sauté for 2 to 3 minutes. Remove from heat, and set aside.
Combine eggs, sour cream, heavy cream, 1 cups cheese, and salt and pepper in a large bowl. Whisk until well combined. Add the sausage and peppers and onions to the bowl with the egg mixture. Whisk everything to combine.
Pour mixture into prepared dish. Top with remaining 1/2 cup of cheese. Bake for 20 to 30 minutes or until the edges are set
