Traditional Mauritian Bhajas Recipe
Bhajas is a traditional dish originating from Mauritius. These vegetable fritters are made with a combination of chickpea flour, all-purpose flour, onions, tomatoes, garlic, mixed vegetables, green chili peppers, coriander, and baking powder.
The flours, garlic, and baking powder are mixed with water to form a thick batter, and the onions, tomatoes, and mixed vegetables are then added to the mix with chopped chili peppers and coriander.
If desired, these snacks can be enriched by the addition of cumin and turmeric.
RECIPE INGREDIENTS
21/2 cups chickpea flour
1/2 cup all-purpose flour
1 clove garlic , minced
1/2 green chili
1/2 bunch cilantro
1 pinch baking powder
1 cup water (warm)
1 teaspoon salt
1 onion , grated
1 tomato , peeled and seeded
4 tablespoons mixed vegetables (canned or frozen)
Cooking oil for deep frying

Mix the two flours, baking powder, and garlic together in a large bowl. Add water. Stir until you obtain a batter that is a little thick and creamy.
Stir in onion, diced tomato and mixed vegetables. Finally, add the cilantro and finely chopped chili.
Cover with plastic wrap and refrigerate at least one hour. Under medium heat, heat oil and fry small amounts in oil until golden brown.
