How To Make Quibebe
Quibebe is a hearty and Brazilian soup or stew made from winter squash and onions. It has a very thick texture and is traditionally served before a larger entrée or the main meal. The dish is somewhat similar to curry due to the usage of chili paste, ground ginger, and coconut milk.
It is recommended to garnish quibebe with fresh parsley.
RECIPE INGREDIENTS
1 Kg pumpkin or butternut squash
1 onion chopped
1 garlic clove chopped
1 tablespoon olive oil
chopped parsley
salt
black pepper
DIRECTIONS ON HOW TO MAKE QUIBEBE
Peel the pumpkin (I prefer using butternut squash) and cut into small pieces: they cook faster.
Sauté chopped onion with garlic in the oil.
Add the pumpkin, a little water, cover and cook over low heat until softened. Stir occasionally and, if necessary, mash with a fork.
Add the chopped parsley at the end and cook for another few minutes.
