How To Make Chicken Rougaille

Rougaille is a classic Mauritian stew consisting of a tomato-based sauce that is enriched with spices such as ginger, chilies, coriander, onions, or curry leaves.

The dish is extremely versatile, so once the sauce is prepared, fish, meat, seafood, or vegetables can be added to it, depending on personal preferences.

It is recommended to serve the stew with rice and a fresh salad on the side.

 

 

RECIPE INGREDIENTS

 2 tablespoons Olive Oil 

6 Sausages or 1/2kg cooked chicken/ beef, cut into medium sizes

2 Onions, finely chopped 

8 Tomatoes, finely diced (approx 1kg / 2.2lbs)

2 cloves Garlic, crushed 

2½ cm Ginger, grated

Small Handful of Curry Leaves, sliced 

1-2 Green Chillies, sliced lengthways

Salt

Chopped Spring Onions to Serve(optional)

Fresh Coriander to Serve(optional)

 

 

DIRECTIONS ON HOW TO MAKE CHICKEN ROUGAILLE

Under medium heat, cook the onions in the olive oil for 3-4 minutes, until starting to soften and translucent. Add chopped sausages or chicken or beef and brown for 5 minutes.

Stir in curry leaves and cook for 30 seconds. Then Stir in garlic and ginger and cook for 2 minutes.

Add chopped tomatoes and chilli (if using) and cook for 20 minutes until sauce thickens and sausages are cooked through. Adjust seasonings, adding salt if needed.

Serve topped with spring onions and coriander if using.
