Gari Soakings is popular Ghanaian dessert made with gari (a powdery food material flour made from the tuberous roots of a cassava plant).

HOW TO PROCESS CASSAVA TO GARI
1. Harvest and sort your cassava taking out those with black colour.
2. Peel the cassava roots using a sharp knife

5. Ferment the Cassava Mash to Remove Hydrocyanic Acid
6. Press the cassava sack with a heavy tool to drain the water in the garri
7. After draining the garri mash, sift the wet cake into grits
8. Fry or roast the grits to form edible garri under medium heat. Stir continuously to avoid burning. Here, you can add palm oil to get yellow garri.
9. Spread the garri in a thin layer and allow it to cool
10. Sieve or grind the garri to break larger granules
RECIPE INGREDIENTS
1/4 cup of Gari
3 spoons of milk or milk powder
sugar to taste
3-5 teaspoons peanuts

In a large bowl or cup, pour in gari. You can add more quantity when needed
Add little water to gari yo make a paste. Add the 3 spoons of milk to form paste and mix well
Add the sugar to mixture and combine completely.
Fill the cup with water to make mixture lighter. Then add your groundnut.

HOW TO STORE GARI
When you process cassava properly you can store it for up to six months or more.
Fry or Roast your gari properly to reduce its moisture content which is usually the main cause of spoilage.
Do not store garri in a moist environment or leave them open in areas with high humidity this will develop molds and spoil.
Package your garri properly in sacks or plastic and store them in a cool dry place
