How to prepare Nkatie Cake

Nkatie Cake also known as Peanut Brittle is a Ghanaian snack. Nkatie cake is usually in a candy bar or shaped in any form made with groundnuts or peanuts and melted sugar.

This snack is also common in Guinea, they refer to it as Kongodo and in Senegal it is known as louga.

Let’s learn how to make this at home from scratch. I know you will love it. Growing up, my mom used to make this for us and reserve some for school days. I could sit for hours, just chewing and enjoy the tasty feel.

This is the sweetest snack with amazing nutrients too. Studies have shown that groundnuts are a great source of Omega 3 Fatty acids and vitamin E.

Rolling pin

Kitchen knife

Blender/Earthenware

RECIPE INGREDIENTS

2 cups roasted peanuts 

1 cup sugar

2 teaspoons oil 

 

 

DIRECTIONS ON HOW TO PREPARE NKATIE CAKE

Crush the roasted peanuts using a rolling pin into smaller bits or using a blender

Under low heat, place a small pot. Melt sugar by stirring continuously until golden brown. The goal here is to caramelize the sugar. Do not burn the sugar.

Add the crushed peanuts and stir everything together. Make sure every crushed peanut is well coated with the caramelized sugar.

After completely coating peanuts, remove from fire.

Transfer the nkate cake onto a lightly oiled surface or a cutting board. Use a rolling pin and roll it flat.

Always cut the peanut cakes while they are still hot or warm. It is very difficult to cut and shape the bars ones they cool.

Cut and shape them into sizes you want
