How To Fry Plantain Chips

Plantain Chips or also called as chifles, mariquitas, or chicharritas, are chips made from thinly sliced green-yellow plantains that are deep fried until crisp and golden and sprinkled with seasoning to taste.

 

They are a popular snack not just in Africa, but also in Peru and Ecuador and other parts of the world.

Plantain is a member of the banana family, but it is starchier and lower in sugar. It is bigger than a banana, has much thicker skin, and is usually consumed when still green.

 It can be baked, fried, roasted, and of course, turned into plantain chips.

In this article, we are going to learn how to Fry this delicious plantains.

TIPS ON HOW TO FRY PLANTAIN CHIPS

Use salt water instead of sprinkling salt directly on the plantains. This ensures that salt gets into every nook and cranny of the plantain.

Slice the plantains using a mandoline slicer or the slicing side of a box grater to ensures thin slices for easy cooking.

Baking dish

Knife/mandoline slicer

 

 

RECIPE INGREDIENTS

Frying method:

3 green or yellow plantains (firm to the touch)

salt to taste

Oil for frying

 

Baking Method:

curry powder

paprika

salt

avocado oil

 

 

DIRECTIONS ON HOW TO FRY PLANTAIN CHIPS

Frying:

Peel the plantains. Cut off both tips of a plantain then cut a line across the ridges of a plantain then lift the skin from the cut portion and remove the entire skin with your hands.

Slice the plantains into chips using a mandoline slicer, the slicing side of a box grater or just cut thinly with a knife.

Mix a quarter cup of water and the salt in a small bowl. Soak plantain for about 5 minutes

Pour oil in a cooking pot up for deep frying.

Heat the oil on a medium heat (the oil should be 350 degrees Fahrenheit hot).

Add the plantains one after the other

Gently stir the plantains and let them fry in the oil while you stir from time to time for about 5 minutes until golden.

Remove the chips and place on paper towel or colander to absorb excess oil.

You can store plantain chips in an airtight container or Ziploc bag.

 

Baking:

Preheat the oven to 350 °F.

Wash and peel the plantains using the same method when frying

Cut them into very thin slices using a mandoline or a sharp knife.

Place the slices into a medium mixing bowl.

In a small bowl, whisk together the curry powder, paprika, salt, and avocado oil.

Pour the spiced mixture onto the plantain slices and mix it together, breaking the stuck slices apart.

Arrange the plantain slices onto a large non-stick baking sheet and bake for 20 minutes.
