How to Fry Ghana Yam Chips
This Yam chips is incredibly tasty and crunchy. We mostly add pepper sauce to it, to give it the spicy feeling which feels good when yam chips are hot.
Yam can be eaten in various ways; either Fried, boiled, roasted, pounded, grind, mashed, or streamed.
All you need for this recipe is just your yam, salt and oil to fry. And in just 30 minutes, you will have an amazing dish right in front of you.
In Ghana, Fried yam chips are sold on streets. Alternatively, you can replace it with potato chips.

RECIPE INGREDIENTS
1 tuber of yam
Chili powder (optional)
Vegetable oil for frying
Salt to taste
For the Red Pepper Sauce
3 red/green scotch bonnet peppers
1 inch ginger root(Optional)
1 tomato
1 small onion
2 garlic cloves
salt to taste
Seasonings
DIRECTION ON HOW TO FRY GHANA YAM CHIPS
FRYING YAM ON STOVETOP:
Peel the outer thick skin of the yam. Wash and cut it up either in thin strips or thick strips( cut in sizes of preference)
Soak chips in salted water in a large bowl for about 5 minutes.
Place pan/ deep fryer on a medium heat until hot.
Drain the yam pieces using a sieve and pat them dry on an absorbent paper towel. ( Make sure they are dry, as water and oil do not go well with each other ).
Fry yam(don’t overcrowd them) on both sides until golden brown. Repeat process if some remains
Remove chips from the hot oil and drain on an absorbent paper towel. Sprinkle the cooked pieces with some salt.
FRYING YAM IN OVEN:
Preheat the oven to about 400-450 degrees.
In a large bowl, add salt, pepper, oil, and the ginger and garlic paste.
Toss the mixture evenly around raw yam chips to ensure the spices coat well.
Place the yam fries on a baking sheet, leave out some space to turn the fries while baking.
Bake for close to 10 minutes. Using a wooden ladle, flip the fries to the other side once they achieve a crispy golden colour.
Sprinkle salt to taste if needed
RED PEPPER SAUCE:
Put all the ingredients of the red pepper in a blender and blend to a smooth paste OR using an earthen ware bowl (asanka), grind it until smooth.(Do not add any water during blending)
Heat some oil in a wok or saucepan under medium heat.
Add blended mixture and stir for r about 5 minutes
Add in seasoning and adjust salt.
Serve hot with yam chips
You can store your pepper sauce longer in fridge.
