How to prepare Vegetable Stew

This is an amazing stew made with veggies and any meat of choice.

It’s a hearty meal which can be served with Rice, Kenkey, Ampesi, Potato or any meal of choice an ideal Ghana cuisine

You certainly won’t miss this meal for any occasion.

Let me guide you on how to make it home from scratch.

 

 

RECIPE INGREDIENTS

1/2 kg cooked meat, diced

1/4 cup vegetable oil

2 onions, sliced

1 smoked salmon

1 medium size cabbage

3 fresh tomatoes

2 teaspoons tomato paste

3 carrots 

2 teaspoons garlic and ginger, minced

Seasoning cube or powder

2 green pepper bell

1 red pepper bell

5 green beans

4 kpakpo shito

Salt to taste

2 bay leaves

 

 

DIRECTIONS ON HOW TO PREPARE VEGETABLE STEW

Wash in a large bowl and blend 1 onion, kpakpo shito and tomatoes together in a blender.

Using a vinegar, wash bell peppers, cabbage, green beans and carrots. Remove seeds and cut them into chunks or medium sizes.

In a large pan and under medium heat, pour oil and add onion slices

Cook and stir until soft and translucent for 3 minutes. Add garlic and ginger, cook for 2 minutes. Then add blended tomato mixture. Cook for 5 minutes.

Add tomato paste and cooked meat. Allow stew to simmer until it thickens.

Stir in chopped vegetables, bay leaves and allow stew to simmer for 4 minutes

Break salmon into chunk sizes and add to stew. Add seasoning cube and salt to taste

Allow stew to simmer under low heat for 5 minutes.

Serve warm with food of choice.
