RECIPE TIPS

WATER

CARROT
ZUCCHINI

DIRECTIONS ON HOW TO MAKE PAP WITH MIXED VEGETABLES
In a large pot, boil 4 cups of water under medium heat. Add 1 teaspoon of salt to taste. Gently stir in the maize meal to pot, stirring continuously with a wooden spoon to prevent umps from forming
Reduce the heat to low and cover the pot with a lid. Allow the pap simmer, stirring occasionally to ensure it doesn’t burn and stick to the bottom of the pot. The pap is ready when it reaches a smooth and thick consistency. If the water is in excess, strain it out
While the pap is cooking, prepare the mixed vegetables. In a separate pan, melt the butter over medium low heat.Stir in the chopped onion and minced garlic to the pan and sauté until they become translucent and fragrant.
Add the diced carrots, bell pepper, zucchini, green beans, and corn kernels to the pan. Cook the vegetables stirring occasionally, until they are tender, not soft yet still slightly crisp.
Sprinkle the ground cumin, paprika, salt, and pepper over the vegetables. Stir well to coat them evenly with the spices. Cook to allow the flavors to meld together.
When pap is ready remove from heat. Stir in the cooked mixed veggies in pap. Don’t put on heat. Serve pap mixed with veggies garnished with fresh parsley, if desired.
