Best Fluffy Banana Pancakes
An amazing Banana Pancake to all breakfast lovers out there, I’m excited to share my classic banana pancakes today.
Ready within 30 minutes (or less) from start to the end, these pancakes use basic ingredients, are packed with flavors and make the ultimate lazy weekend breakfast or brunch.
RECIPE NOTES
When you combine all the ingredients together, make sure you don’t overmix. Excessive mixing encourages gluten development, which will make your pancakes tough and rubbery.
I recommend you let the batter rest for 5 to 10 minutes before cooking. This guarantees a smoother more uniform texture, and also gives any gluten development to relax, making the pancakes lighter and fluffier.
Pancakes aren’t supposed to be fried. If you use a skillet, rub on a little vegetable oil with a paper towel (butter is also good, but make sure it doesn’t burn).
RECIPE INGREDIENTS
Plain flour
Baking powder
Oat milk or any milk of choice
Coconut or vegetable oil
Cinnamon
Toppings:
Banana
Maple syrup (or honey if you’re not vegan), to drizzle
DIRECTIONS ON HOW TO MAKE THE BEST FLUFFY BANANA PANCAKES
Cut the bananas into pieces and pour in blender with the flour, baking powder, cinnamon and oat milk.
Purée until smooth. Alternatively, mash the banana thoroughly on a plate, then transfer to a bowl and whisk in the other ingredients until smooth.
Over medium heat, pour a teaspoon of the oil in a frying pan. Scoop the mixture into the pan about 10cm/4in in diameter. Your can cook two pancakes at a go!
Cook for around 2 minutes on each side, or until golden-brown, adding more oil if needed, then keep warm. Repeat until you have made all the pancakes.
To serve, top with the banana, maple syrup. Enjoy while still warm.
