Peri Peri chicken also called Piri Piri Chicken is a traditional Portuguese dish.
This dish was introduced in Angola and Mozambique when the Portuguese settlers came with Chili Peppers or what they call, Piri Piri.
This chicken dish is covered in chili based sauce along with other seasonings before grilling them. It is best served with steamed rice or dinner rolls

4 pieces birds eye chilli
3 mixes chillies
1/2 teaspoon ground bay leaf
1 teaspoon salt
4 cloves garlic
1 tablespoon black pepper
1 tablespoon chilli flakes
1 tablespoon Oregano
Juice of 1 lemon
2 tablespoons vinegar
1 large red bell pepper roughly chopped
1/2 cup vegetable oil
4-6 pieces Chicken drumsticks
DIRECTIONS ON HOW TO COOK PERI PERI CHICKEN
Prep: Wash and clean chicken. Place in a large bowl.
In a small mixing bowl, whisk together the lemon juice and garlic.
Pour the lemon mixture over the chicken and coat on every side. Season the chicken with salt; cover it and let it sit on the kitchen counter for about 30 to 60 minutes.
Peri Peri Sauce: In a food processor or blender, combine chilies and garlic, vinegar, bay leaves, lemon juice, salt, and pepper.
Pulse the mixture until blended. Add oregano and oil, then process until it’s smooth and completely combined.
You can also add a little sugar for a bit of sweetness in your sauce(Optional)
Marinate Chicken: Pour your peri peri sauce over chicken.
Cover the bowl with a cling wrap or place the chicken in bowl with lid and refrigerate for at least 2 hours, preferably overnight
Grilling Chicken: Using a tong or fork, remove the chicken from the peri peri marinade and remove excess marinade. Reserve the marinade.
Preheat grill to medium-high heat.
Place chicken on the grill and grill for about 10-15 minutes an each side turning occasionally on each side until it is cooked.

If you are using an oven, heat your oven to 370 degree C.
Line a baking tray with foil, place and place your marinade chicken on it. Grill this for 20- 30 minutes until chicken is juicy and tender. When it’s brown and starting to char, chicken is cooked.
Brush more sauce when needed.
Serve with fresh parsley or lemon wedges with sauce
Storage: Place leftover grilled chicken in an airtight container and refrigerate for up to 2-3 days. You can store your leftover chicken in the freezer for up to 4 months
