Plantain Sandwich Recipe(Jibarito)

Jibarito is a unique Puerto Rican sandwich made with smashed, fried plantains instead of bread. The sandwich is typically filled with garlic mayonnaise, meat, lettuce, tomatoes, and cheese. 

The origins of jibarito are somewhat hard to untangle, as some clalpanim that the sandwich is originally a Puerto Rican invention, while others claim that it was created by Juan Figueroa at the Borinquen

 

 

RECIPE INGREDIENTS

Green plantains

Cooking oil

Steak

Mayoketchup

Tomatoes, sliced

Lettuce, rinsed and dried

cilantro to top (optional)

salt and pepper to taste

 

 

DIRECTIONS ON HOW TO MAKE PLANTAIN SANDWICH RECIPE(JIBARITO)

Make the mayoketchup by mixing mayo with tomato ketchup. Slice the tomatoes, and rinse and dry the lettuce. Chop if desired.

Peel plantain. Under medium heat, heat oil in a pot. Cut the plantains in half before frying until they begin to turn golden brown. Transfer to a paper towel lined plate.

Place cooked plantain in between two plates, cutting boards and gently smash until they flatten. Fry again in the hot oil until golden brown and crispy.

If using steak, season with desired seasonings. Cook however you like your steak.

Assemble the jibaritos with one fried plantain and start assembling by spreading a generous spoonful of the mayoketchup, topped with the meat, followed by the veggies, herbs, and salt and pepper to taste.
