RECIPE INGREDIENTS
2 tablespoons extra-virgin olive oil
1 cup medium onion, diced
Freshly ground black pepper
1 cup red and green bell pepper, diced
Kosher salt
4 boneless, skinless chicken breasts
1 cup shredded cheddar
2 tablespoons Cajun seasoning
DIRECTIONS ON HOW TO MAKE CAJUN STUFFED CHICKEN
Preheat oven to 350°.
Heat oil in a large oven proof skillet over medium heat.
Add onions and peppers and cook until soft for about 5 minutes. Season with salt and pepper.
Remove from heat and let it rest for a while.
With a sharp paring knife, create a pocket in each chicken breast. Stuff each with vegetable mixture, then top with cheddar.
Season chicken all over with Cajun seasoning, salt, and pepper.
Add chicken to skillet and bake until cooked through for about 25 minutes.
Remove from heat and serve plain, with rice, or over buttered pasta.
