How to Grill Tilapia

HOW TO GRILL TILAPIA

This recipe is simple and easy to make. Grilling Tilapia is one of my every day to do list for the family.

I love how juicy and soft it taste and how full it makes me. You have to try this recipe at home.

Most at time, during night you find food vendors on the street of Accra selling this amazing dish with Banku or Kenkey. Lets learn how to make this from scratch.

EQUIPMENT

Oven

Cutting board

Grill and charcoal

Blender/asanka for grinding ingredients

Fish basket for turning fish

 

RECIPE INGREDIENTS

1 Large Whole Tilapia

3 teaspoons Cooking oil

2 Onions, divided

2 cloves Garlic

3 chili or Habanero pepper

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/2 teaspoon turmeric powder

1 teaspoon rosemary

1 inch root ginger

1 Green Bell pepper

Seasoning cube/powder

1 teaspoon vinegar

 

 

DIRECTIONS NEEDED ON HOW TO GRILL TILAPIA

Preparation:

Descale tilapia using a sharp knife. Remove gill covering and hard fins. Wash and clean using vinegar (optional)

Cut 2 diagonal slits of each side of the fish. Set aside in a bowl

Blend garlic, chili pepper, ginger, onion and rosemary

Pour blended ingredients in a bowl and add oil, seasoning, cumin, coriander and salt to taste

Rub mixture over the fish( diagonal slits and inside of fish)

Marinade fish in fridge for an hour or overnight. Or grill immediately

 

Using Grill and Charcoal:

Set up your charcoal grill and make sure heat is medium high.

Brush the fish basket with oil and place fish in it.

Place basket directly on top of charcoal fire and grill for 5-10minutes on each sides. Make sure to keep fish soft and moist with oil while grilling.

 

Using an oven:

Pre-heat oven to 350 F

After marinade, place fish in foil then rub it again with some Marinade.

Place fish in Oven for about 15 minutes on one side.

Flip it to the other side and rub it with some marinade again. Then leave it to cook for another 15 minutes.

Garnish with green bell pepper and onion. Serve Grilled Tilapia with Banku, Fried Rice, White rice, Yam, salad.

 

ADDITIONAL TIPS ON HOW TO GRILL TILAPIA

Use foil or a fish tray to prevent the filet from falling apart and sticking to the grates.
