How To Prepare Egg Stew

This egg stew recipe is delicious and easy to make, you would want to eat this with any meal.This egg stew can be served at lunch and dinner as well.

RECIPE INGREDIENTS

1 big smoked mackerel

4-6 fresh tomatoes

1 red bell pepper, sliced

11/2 onion chopped

1/3 cup vegetable oil

3 large eggs

2 teaspoons Powered pepper

salt to taste

Seasoning cubes

1 teaspoon Curry

1 teaspoon Thyme

1 teaspoon parsley(optional)

 

 

DIRECTIONS ON HOW TO PREPARE EGG STEW

Break head of the mackerel, remove bones and unwanted parts. Wash and break into desired sizes.

Place a pan on medium heat, add vegetable oil. Add the chopped onion and thyme and stir till onion become translucent and tender.

Follow by chopped tomatoes and bring to boil for another 4-5 minutes. Add salt, curry and seasoning, sliced red pepper. 

Stir powered pepper into the sauce.Add flaked fish to sauce and stir gently.

Break the eggs into a bowl and whisk untill well combined.( I added salt)

Add whisked eggs into the fish stew making sure it is covering the whole sauce. Allow egg to set before stirring, this should take about 2 minutes. 

Once the egg is set, stir so as to allow the uncooked part of the egg to cook. Take egg stew off heat so as not to overcook and dry out. Add parsley and stir. Serve with side of choice.
