How to prepare Mpotompoto(Yam Porridge)

Mpotompoto is a local Ghanaian food which is mainly prepared using yam, cocoyam or potatoes.

It is mostly called nuhu, nyoma or yam porridge.

It is easy to make and can be enjoyed as both breakfast or dinner.

RECIPE INGREDIENTS

1/2 Yam or cocoyam or potato

2 Fresh tomatoes

1 medium sized onion

2 tablespoons Palm oil

1 teaspoon Garlic cloves, minced

3 Kpakposhito pieces

Seasoning (maggi or onga cube)

1 teaspoon ginger optional, minced

Salt

1 teaspoon Nutmeg powder

2 tablespoon Herrings

 

 

DIRECTION ON HOW TO PREPARE MPOTOMPOTO(YAM PORRIDGE)

Peel and cut yam tuber into smaller pieces into a large bowl.

Pour water over yam pieces and wash until clean and tidy with no dirt or particles.

Transfer rinsed yam into a clean cooking pot and fill it with a reasonable amount of water.

If you want a thicker porridge, add moderate water. And of you want a runny porridge, add more water

Under medium heat in a large pot, place yam pieces on fire. Add tomatoes, ginger, garlic, onions and pepper to the yam.Cover it and allow it to boil.

Transfer fish into a clean bowl, wash and clean. Break into larger pieces.

Remove the tomatoes, onions and pepper from the boiling pan and transfer them into a blender.Blend mixture until smooth.

Pour blended mixture into the boiling yam. Add fish and herrings.Add salt and maggi/nutmeg

Using a wooden ladle, mash the yam against the sides of the cooking pot to get a porridge consistency. Do not over mix. The porridge should be a little lumpy

Add palm oil and allow it to boil until it thickens

Remove from fire and serve whiles hot
