Whipped Ricotta Toast
This savory whipped ricotta appetizer is ready in under 15 minutes and served on toasted bread.
DIRECTIONS ON WHIPPED RICOTTA TOAST
Lightly toast your sliced bread in unsalted butter
Combine ricotta and ½ teaspoon kosher salt in a food processor or blender.
Blend to combine, then, with the motor running, slowly drizzle in the olive oil and continue processing on high speed until the ricotta is smooth and creamy for about 2 minutes.
Spread or pipe whipped ricotta onto toasts and season with pepper.
Add the filling into a piping bag. Make sure you remove any air bubbles. Cut a dime sized tip and pipe it on your toast.

Use whole milk ricotta! Use the highest quality whole milk ricotta you can find, whether it’s making it fresh at home or getting some from a local dairy farm at the farmer’s market.
It completely changes the taste of the ricotta, but store-bought is completely fine.
Keep your ricotta cold until you’re ready to whip
Use your favorite extra-virgin olive oil.
