EQUIPMENT
Blender
Cooking pot

 

RECIPE INGREDIENTS FOR TILAPIA SOUP

2 large Tilapia

3 ripe garden eggs (orange colour)

1 tablespoon turkey berries

3 Fresh Tomatoes

2 teaspoons Tomato paste

2 medium Onions

5-7 scotch bonnet pepper or green chilli

1 inch ginger

1-2 cloves garlic

Grounded shrimp powder(Optional)

Salt and seasonings

 

 

DIRECTIONS ON HOW TO PREPARE TILAPIA SOUP

Place garden eggs, turkey berries,1 onion, and scotch bonnet pepper in a saucepan.

Add water and bring to a boil under medium heat until the garden eggs is cooked and soft.

Descale the Tilapia by cutting the fish open to remove the internal organs and scraping all the sides.

Wash and add to a cooking pot. Sprinkle 1 teaspoon of salt over the fish and toss it so that it coat all around. Leave it to marinate for 5 minutes.

Blend ginger, garlic and onion using a moderate amount of water until smooth. Pour over fish

Add seasonings. Add fresh tomatoes

Place cooking pot on medium heat and boil fish for about 5 minutes. Add tomato paste. Allow fish to simmer for about 5 minutes

Blend cooked garden eggs, cooked fresh tomatoes and the other ingredients with moderate water until smooth.

Strain using a colander or sieve into a bowl OR pour it directly into the cooking pot.

Add a moderate amount of water to the mixture. Allow it to cook for about 20 minutes. Add grounded shrimp. Adjust salt.

When the soup thickens and oil starts to form on top, then soup is ready to be consume.

Serve the soup with your favorite accompaniment either fufu, boiled ripe plantains or fluffy boiled rice.
