The process of obtaining the corn flour involves lightly toasting the corn and later grinding it.

Tom Brown can also be a combination of yellow corn, millet, guinea corn (cereals), groundnut (peanuts) , crayfish, dates(sweetener) and soy beans (legumes).

RECIPE INGREDIENTS

Corn(Maize, Yellow or sorghum)

Milk

Sugar

Honey (optional)

Salt

Nutmeg (optional)

Cinnamon powder(optional)

 

 

DIRECTIONS ON HOW TO PREPARE TOM BROWN

Buy dried yellow corn or guinea corn(sorghum) or maize corn. Remove the stones and other foreign particles amongst the corn.

On a low heat, roast corn until its turned golden brown. Here you can add roasted peanuts, dates, soy beans if using then send to the grinding mill or use a high power blender. Ground them into a powder form.

Tom brown powder is ready! Pour it inside a dry container to preserve it.

Put a quantity of roasted corn flour in a bowl, slowly  add water and stir well until a thick mixture is formed .(Crush all small lumps formed)

Boil hot water(Quantity of water shouldn’t be more than paste mixture). Then, when the water vapor bubbles is quite noticeable, add the paste mixture.

Stir continuously until it thickens. Add little pinch of salt and nutmeg if using

For a spicy taste, add some cinnamon powder to the mixture and stir

Add more water if the paste is too thick for you.

Likewise, add more roasted corn flour if the paste is too thin

Add honey or sugar to taste and stir consistently

Reduce heat and allow the mixture to boil for about 5 minutes

Adjust sugar. Remove from heat and serve tom brown hot

You can serve this yummy cereal with milk, sweeteners and some slice of bread.
